Caramelized Onion and Lentil Soup

This recipe is savory and enticing, with a hint of the unexpected. Large green lentils pair-up surprisingly well with caramelized onions that will melt in your mouth. Big on flavor and an excellent source of fiber -this soup is divine!

 2 Large onions, thinly sliced
 1 tbsp Olive, sunflower, grapeseed, or other cooking oil
 ½ tsp Raw sugar
 4 cups Chicken broth (use organic or homemade)
 1 tbsp Worcestershire sauce
 2 cups Water
 1 tsp Salt

Heat oil over medium heat in large pot.

Stir in sliced onions, reduce heat to medium low.

Stir in sugar.

Sauté onions, slowly, until lightly browned and caramelized.

Add chicken broth, Worcestershire, salt and pepper, cumin and flax meal.

Add lentils

Cook for 20 – 30 minutes.
