 1 cup Willow Creek Organic Quinoa , rinsed and cooked
 ¼ cup cucumber diced
 ¼ cup tomato, diced
 ¼ cup black olives, pitted and sliced
 ¼ cup red onion, diced
 ½ cup feta cheese, crumbled
 2 tbsp flat leaf Willow Creek Organic Parsley
Dressing
 Zest of one lemon
 2 tbsp fresh lemon juice
 3 tsp Willow Creek Organic Flax Oil
 ¾ tsp Willow Creek Organic Cumin
 ½ tsp Willow Creek Organic Coriander
 ½ tsp Willow Creek Organic Paprika
 1 clove garlic, minced
