Three Lentil Oat Muffins

Jam-packed with wholesome ingredients like oats, lentils, dried fruit, and flax, this recipe is very high in fiber, a good source of iron, and delivers 11g of protein per muffin.   cup Brown sugar
 1 Egg, Beaten
 1 cup Applesauce
 1 cup Buttermilk
 zest of one orange
 1 cup 100% whole wheat flour
 1 tbsp Baking powder
 ¾ tsp Sea salt
  cup Dried cranberries (or sultanas, raisins or other dried fruit)

Preheat oven to 350°

Prepare muffin tin with muffin liners.

In a bowl combine sugar, egg, applesauce and buttermilk.

Beat Three Lentil Mix together with wet ingredients.

Set aside for 5 minutes.

Mix 100% whole wheat flour, baking powder, and salt together.

Stir dry ingredients into wet just until combined.

Add cranberries.

Fill in muffin liners 3/4 full. (This can also be used as a bread recipe)

Bake for 15-17 minutes.
