Wild Rice & Pearled Barley Pilaf

This colorful and unique pilaf combines two whole grains into a tasty side dish. It provides an excellent source of complex carbohydrates and cholesterol-lowering fiber, along with an assortment of vitamins and minerals like vitamin A, magnesium, phosphorus, folate, and B-vitamins.

 1 tbsp olive, sunflower, grapeseed, or other cooking oil
 1 large onion, chopped
 2 large carrots, chopped
 2 stalks celery, sliced
 2 cloves garlic, minced
 3 ½ cups chicken or vegetable broth (use homemade or organic)
 ¾ cup uncooked Willow Creek Organic Wild Rice
 ¾ cup uncooked Willow Creek Organic Pearled Barley
 2 tbsp chopped fresh parsley

Heat oil in large nonstick skillet over medium heat.

Add onion, carrots, celery and garlic and cook until tender.

Stir in broth and wild rice.

Heat to a boil.

Cover and cook over low heat 20 minutes

Add pearled barley.

Cover and cook over low heat 20 minutes or until wild rice and barley are done.

Stir in parsley.
