Pumpkin Seed Bread

(Use organic ingredients whenever possible).

This delightfully spicy and sweet loaf is loaded with hearty seeds and wholesome ingredients like pumpkin, flax, and yogurt. It is a good source of fiber and vitamin E, and contains disease-fighting phytosterols. It also packs a triple-punch of healthy polyunsaturated fats from the seeds, milled flax, and flax oil. This bread is a delicious way to start the day, or as an anytime snack.

 2 cups 100% whole wheat flour
 2 tsp Baking powder
 ½ tsp salt (or sea salt)
 1 tsp Willow Creek Organic Nutmeg
 1 tsp Willow Creek Organic Cinammon
 ¼ cup Willow Creek Organic Pumpkin Seeds
 ¼ cup Willow Creek Organic Sunflower Seeds
 ¼ cup Willow Creek Organic Milled Brown or Milled Golden Flax
 ¾ cup Brown or raw sugar
 ¼ cup Willow Creek Organic Flax Oil
 1 Large egg (whisked)
 1 ¼ cups Pure pumpkin
  cup Plain yogurt
 1 tsp Vanilla

In a large bowl combine all dry ingredients.

Blend in whisked egg, pumpkin, yogurt, flax oil and vanilla.

When fully blended put in a lightly grease 8.5×4.5 loaf pan

Bake in oven between 40 to 50 minutes at 350° degrees.

Cool in pan 10 minutes before removing.
