Wild Rice & Pearled Barley Soup

(Use organic ingredients whenever possible).

This fuss-free soup is a nice comfort on a chilly day or a hearty meal anytime. It is a source of complex carbohydrates, protein, and an assortment of vitamins and minerals. Enjoy with a warm slice of bread or a side-salad.

 ½ tbsp olive, sunflower, grapeseed, or other cooking oil
 1 cup onions
 ¼ carrot
 ¼ celery stalk
 ¼ cup Willow Creek Organic Pearled Barley
 ¼ cup Willow Creek Organic Wild Rice
 3 cups water
 1 lb beef or chicken
 ½ tsp dried thyme
 ½ tsp salt
 ¼ tsp Willow Creek Organic Pepper

Dice all vegetable ingredients beforehand. In pot add oil and sauté onions. Add vegetable ingredients and spices. Then add water, pearled barley and wild rice. Cook for approx. 45 minutes stirring occasionally.
