Black Bean and Lentil Salsa

Loaded with flavor and packed with nutrition, this salsa will become your new favorite snack and condiment. This recipe provides a high source of cholesterol-lowering fiber, along with a multitude of vitamins and minerals like vitamin C, folate, magnesium, potassium and iron, plus it is low in sodium. With all these colors, you know you are eating healthy!

 1 cup Tomato, seeded, diced, and well drained
 1 tbsp Tomato paste
 3 tbsp Red onion, diced
 2 Cloves garlic, minced
 4 tbsp Willow Creek Organic Black Turtle Beans
 2 tbsp Willow Creek Organic Large Green Lentils
 3 tbsp Corn kernels
 2 tbsp Green bell pepper, diced
 2 tbsp Red bell pepper, diced
 2 tsp Willow Creek Organic Flax Oil
 2 tsp Red wine vinegar
 1 ½ tsp Fresh lime juice
  tsp Willow Creek Organic Cayenne or more
 Sea salt and cracked Willow Creek Organic Black Pepper to taste

Precook beans and lentils prior to starting recipe.

Combine all ingredients in a bowl and marinate in fridge for at least one hour stirring twice.
