Four Bean Chili

Use organic ingredients whenever possible).

It doesn’t get any heartier than this chili. Loaded with legumes like pinto beans, kidney beans, Black beans and Chickpea, this fuss-free recipe is an easy way to get a boost of cholesterol-lowering fiber. It is also high in protein and an excellent source of iron, and vitamin C. This recipe is sure to become a new family favorite!

 4 cups Water
 1 Onion, medium chopped
 ½ cup Green pepper, chopped
 ½ cup Celery, sliced
 3 Cloves garlic, minced
 1 tbsp Olive, sunflower, grapeseed, or other cooking oil
 1 ½ lbs Extra lean ground beef
 1 tsp Willow Creek Organic Chili Powder
 ½ tsp Willow Creek Cayenne Powder
 1 tsp (or 1 and 1/2 ) Salt
 28 oz Whole tomatoes, chopped and drained
 14 oz Stewed tomatoes
 6 oz Can tomato paste
  tsp Willow Creek Organic Cinnamon
 1 tsp Raw sugar
 ½ cup Willow Creek Organic Chickpeas
 ½ cup Willow Creek Organic Pinto Beans
 ½ cup Willow Creek Organic Red Kidney Beans
 ½ cup Willow Creek Organic Black Beans

Heat oil in large pot over medium heat.

Sauté onion, green pepper and celery for approx. 10 minutes.

Meanwhile, in a seperate pan, cook ground beef thoroughly, drain and add to pot.

Stir in chili powder, cayenne, celery salt, tomatoes, stewed tomatoes, tomato paste, and cinnamon.

Add pinto, kidney beans, black beans, chickpeas and rest of ingredients.

Stir, and simmer for one hour.
