Lentil Spread

(Use organic ingredients whenever possible).

This sure-to-please spread made with large green lentils is very high in fiber and a source of heart-healthy fats and protein. Spread over your sandwich bread for a zingy flavour boost, or use as a dip for vegetables or our Three Lentil Crackers.

 ½ cup Willow Creek Organic Large Green Lentils
 ¼ cup plain yogurt
 1 ½ tsp dijon mustard
 ¾ tsp salt
 2 tsp capers
 2 tbsp onion, minced
 1 tbsp Willow Creek Organic Flax Oil
 1 tsp fresh lemon juice
 1 ½ tsp lemon zest
 2 tsp Willow Creek Organic Milled Golden Flax

Precook lentils before starting recipe.

Place all ingredients in food processor and blend until smooth.

Chill for two hours.
